{"id":1273,"date":"2019-05-14T12:38:25","date_gmt":"2019-05-14T12:38:25","guid":{"rendered":"http:\/\/priorclavena.com\/?p=1273"},"modified":"2020-01-30T21:40:56","modified_gmt":"2020-01-30T21:40:56","slug":"trends-in-retort-processing-goodbye-canned-food-hello-retort-pouches","status":"publish","type":"post","link":"https:\/\/www.priorclave.com\/en-us\/2019\/05\/14\/trends-in-retort-processing-goodbye-canned-food-hello-retort-pouches\/","title":{"rendered":"Trends in Retort Processing: Goodbye Canned Food, Hello &#8220;Retort Pouches&#8221;"},"content":{"rendered":"<p class=\"p1\">For hundreds of years <em>retort processing<\/em> (i.e., &#8220;canning&#8221;) has made it possible to prepare spaghetti sauce in minutes\u2014instead of hours\u2014eat tuna regardless of how many thousands of miles you live from an ocean, and have veggies year-round.<\/p>\n<p class=\"p1\">In terms of the production workflow and equipment, food and beverage retort processing has changed very little since the early 1800s:<\/p>\n<ol class=\"ol1\">\n<li class=\"li1\">food is loaded into steel cans<\/li>\n<li class=\"li1\">the cans are sealed<\/li>\n<li class=\"li1\">the sealed cans are dumped into baskets<\/li>\n<li class=\"li1\">the baskets are loaded into &#8220;retorts&#8221; (i.e., room-sized steam autoclaves)<\/li>\n<li class=\"li1\">the sealed cans are autoclaved at about 235\u00ba for about two hours<\/li>\n<li class=\"li1\">the cans are cooled, inspected, labelled, and shipped<\/li>\n<li class=\"li1\">you buy the can, opened it, heat up your SpaghettiOs, and, <i>Voil\u00e0! Bon app\u00e9tit, mon ch\u00e9ri!<\/i><\/li>\n<\/ol>\n<p class=\"p1\">It&#8217;s a good technology, but an old one:<span class=\"Apple-converted-space\">\u00a0 <\/span>Cans are heavy and bulky.<span class=\"Apple-converted-space\">\u00a0 <\/span>Not only are they resource intensive to process, but also to ship and handle.<span class=\"Apple-converted-space\">\u00a0 <\/span>On top of all that, they&#8217;re plagued by &#8220;<a href=\"http:\/\/blogs.discovermagazine.com\/80beats\/2012\/05\/14\/why-preserved-food-is-so-bad-retort-flavor\/\">retort flavor<\/a>&#8220;\u2014the the flat, often metallic taste typical of canned foods.<span class=\"Apple-converted-space\">\u00a0 <\/span>Subsequently, they&#8217;re often loaded up with salt and sugar to make them more palatable\u2014and, unfortunately, much less healthy than they could be.<\/p>\n<h2 class=\"p1\"><span class=\"s1\">Increasing Efficiency and Convenience while Eliminating Retort Flavor <\/span><\/h2>\n<p class=\"p1\">The solution is the increasingly common &#8220;retort pouch.&#8221;<span class=\"Apple-converted-space\">\u00a0 <\/span>These are heavy-duty plastic pouches, originally developed for the U.S. Army&#8217;s MRE (&#8220;<a href=\"http:\/\/en.wikipedia.org\/wiki\/Meal,_Ready-to-Eat\">Meal, Ready-to-Eat<\/a>&#8220;) field rations.<span class=\"Apple-converted-space\">\u00a0 <\/span>They&#8217;re processed almost identically to canned foods (i.e., fill, seal, heat, ship, eat), but offer three key advantages:<\/p>\n<ul class=\"ul1\">\n<li class=\"li1\"><b>Efficiency<\/b>\u2014Because the retortable pouches have both a thinner profile and better thermal conductivity overall, they heat considerably faster in the retort.<\/li>\n<li class=\"li1\"><b>Flavor<\/b>\u2014Shorter heating times doesn&#8217;t just save energy, it also protects flavor and aroma; people invariably report that pouched foods taste &#8220;fresher&#8221; or just plain &#8220;better.&#8221;<\/li>\n<li class=\"li1\"><b>Convenience<\/b>\u2014This isn&#8217;t a matter of the lazy consumers who can&#8217;t be bothered with cranking a can opener. Children, those with limited mobility, and especially elders are often unable to open traditionally retort-processed cans without assistance.<\/li>\n<\/ul>\n<p class=\"p1\">The one downside is that, while durable, retort pouches will burst during retort processing, due to the pressure changes that come with that high-heat process.<span class=\"Apple-converted-space\">\u00a0 <\/span>The solution (as with <a href=\"https:\/\/www.priorclave.com\/en-us\/2019\/01\/29\/lab-autoclave-function-primer-intro-to-air-ballast-systems\/\">autoclaving sealed flasks<\/a>) is an <b>air ballast system<\/b> (in food processing this is often called &#8220;air overpressure&#8221;).<\/p>\n<p class=\"p1\">Production scale overpressure retorts are a big investment.<span class=\"Apple-converted-space\">\u00a0 <\/span>This has slowed the shift to retort pouches.<span class=\"Apple-converted-space\">\u00a0 <\/span>Because of our experience building custom research-grade autoclaves, Priorclave has been able to partner with food and beverage producers to outfit them with air-ballast autoclaves for new product development.<span class=\"Apple-converted-space\">\u00a0 <\/span>These can precisely mimic the conditions in a large overpressure retort, but at a smaller scale.<span class=\"Apple-converted-space\">\u00a0 <\/span>They can work out all the kinks\u2014from packaging issues to audience testing
