{"id":826,"date":"2016-11-24T09:32:15","date_gmt":"2016-11-24T09:32:15","guid":{"rendered":"http:\/\/priorclavena.com\/?p=826"},"modified":"2020-01-31T20:02:22","modified_gmt":"2020-01-31T20:02:22","slug":"developments-full-validated-turkey-autoclaving","status":"publish","type":"post","link":"https:\/\/www.priorclave.com\/en\/2016\/11\/24\/developments-full-validated-turkey-autoclaving\/","title":{"rendered":"Further Developments in Full-Validated Turkey Autoclaving"},"content":{"rendered":"<p>Since we <a href=\"http:\/\/www.priorclave.com\/en-us\/2014\/11\/19\/blogthanksgiving-dinner-autoclave-style\/\">first mentioned<\/a> it, the time-honored tradition of turkey autoclaving has continued to pick up steam.<\/p>\n<p><a href=\"https:\/\/en.wikipedia.org\/wiki\/Craig_Venter\">Craig Venter<\/a>\u2014among the first scientists to sequence the human genome\u2014was doing it back in the &#8217;70s (there&#8217;s a great anecdote about\u00a0<a href=\"https:\/\/goo.gl\/hPzfVf\">cooking a feisty 75-pounder (!!!) via autoclave<\/a>\u00a0in his memoir, <i>A Life Decoded<\/i>). As we mentioned <a href=\"http:\/\/www.priorclave.com\/en-us\/2015\/11\/26\/cook-turkey-science\/\">last year<\/a>, it&#8217;s fully possible to cook an average T-Day bird in\u00a0a single 45 cycle (<a href=\"http:\/\/www.priorclave.com\/en-us\/2015\/11\/26\/cook-turkey-science\/\">click through<\/a> to watch the video from Venture Medical).<\/p>\n<p>Now we&#8217;ve stumbled across an even\u00a0<em>more<\/em> detailed <a href=\"http:\/\/oldfoolrn.blogspot.com\/2015\/11\/how-do-you-cook-thanksgiving-turkey-in.html\">turkey autoclaving anecdote form a retired surgical nurse.<\/a>\u00a0 The verdict? \u00a0As we&#8217;ve long suspected, a family-size Thanksgiving turkey can indeed be cooked via autoclave in <em>just 20 minutes!<\/em><\/p>\n<blockquote><p>When I returned to the OR suite with my prized gobbler,<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-1480\" src=\"http:\/\/www.priorclave.com\/en\/wp-content\/uploads\/sites\/4\/2015\/11\/if-you-ran-your-kitchen-like-a-typical-lab.jpg\" alt=\"\" width=\"355\" height=\"458\" srcset=\"https:\/\/www.priorclave.com\/en\/wp-content\/uploads\/sites\/4\/2015\/11\/if-you-ran-your-kitchen-like-a-typical-lab.jpg 355w, https:\/\/www.priorclave.com\/en\/wp-content\/uploads\/sites\/4\/2015\/11\/if-you-ran-your-kitchen-like-a-typical-lab-233x300.jpg 233w, https:\/\/www.priorclave.com\/en\/wp-content\/uploads\/sites\/4\/2015\/11\/if-you-ran-your-kitchen-like-a-typical-lab-64x83.jpg 64w, https:\/\/www.priorclave.com\/en\/wp-content\/uploads\/sites\/4\/2015\/11\/if-you-ran-your-kitchen-like-a-typical-lab-128x165.jpg 128w, https:\/\/www.priorclave.com\/en\/wp-content\/uploads\/sites\/4\/2015\/11\/if-you-ran-your-kitchen-like-a-typical-lab-240x310.jpg 240w, https:\/\/www.priorclave.com\/en\/wp-content\/uploads\/sites\/4\/2015\/11\/if-you-ran-your-kitchen-like-a-typical-lab-320x413.jpg 320w\" sizes=\"auto, (max-width: 355px) 100vw, 355px\" \/>Dr.\u00a0Clobber \u00a0whipped out his ever present slide rule (no calculators) and asked me the weight of the turkey (about\u00a09 \u00a0kg.) \u00a0and some other data about the autoclave in the old OR room. We test fired the old autoclave and it fired right up with that impressive\u00a0belch of steam. No bothersome preheating with this baby! \u00a0It worked like new. We just had to be careful to remember the correct autoclave door opening sequence. Our newer ones were all equipped with safety interlocks and modern safety devices like pressure relief valves.<\/p>\n<p>After some frenzied slide rule calculations, Dr.\u00a0Clobber said to fetch an instrument tray and place the turkey in the <span style=\"text-decoration: line-through;\">roaster<\/span> instrument tray.\u00a0\u00a0Next, proceed to the old \u00a0autoclave and run\u00a0it for a 20 minute cycle. We tied the gobblers legs together with autoclave tape more or less out of force of habit.\u00a0 We figured it would function as well as one of those pop-up gizmos. After the 20 minute cycle we popped the autoclave door open to the most delightful aroma of turkey I have ever experienced. Betty Crocker would have been impressed.\u00a0 The turkey was moist and delightful and made for a most memorable on-call experience.<\/p><\/blockquote>\n<p>Thus it is demonstrated: You can&#8217;t beat the efficiency of a <a href=\"https:\/\/www.priorclave.com\/en\/autoclaves\/\">cylindrical chamber steam autoclave<\/a>.<\/p>\n<p>(Be sure to <a href=\"http:\/\/oldfoolrn.blogspot.com\/2015\/11\/how-do-you-cook-thanksgiving-turkey-in.html\">read the whole post<\/a> for some really interesting details about\u00a0hospital administration, 1930s surgical\u00a0theaters, and what two atmospheres of pressure\u00a0will do to a dressed-out turkey.)<\/p>\n<p><small><b>FINE PRINT<\/b>: Priorclave does not recommend the use of laboratory autoclaves for the preparation of foods for human consumption.
